Recipe - Chocolate Cake!

I love cake. Who doesn't? So today I made a chocolate cake with butter cream icing in the middle. My photos of it were such bad quality I didn't want to include them :( 

For a basic chocolate cake recipe you will need;


3 eggs
175g self raising flour

175g caster sugar
175g butter/baking butter

For the chocolate-y goodness, some people may say use cocoa powder or similar, however I take one bar of chocolate and melt it, then pour it into the cake mix. No real reason, I just prefer it this way.

Put the sugar and butter into a bowl and mix mix mix until it's all creamy.
Then, beat the eggs together in a separate bowl so they're all mixed into a yellow/orange liquid (we all know what eggs look like when beaten!)
Then, bit by bit, add the flour and eggs to your creamy mix and mix it until it forms a thicker, creamy batter. 
This is where I add the chocolate. Melt it so it's a... well... melted chocolate mixture! Don't have it so runny that it's like water, just the perfect, melted consistency. 
Add this all at once to your cake batter and mix it in until you have chocolate cake batter. 

Put it in the oven at 175 degrees/350 fahrenheit, and leave it in there for around 15 minutes, but keep an eye on it so it doesn't burn/make sure it is fully baked.

For the butter cream icing you will need;

150g icing sugar
75g butter
2 tblsp milk

All you need to do for this is mix it together, not much preparation needed! You may need to add a little more icing sugar to thicken up the butter cream, or a little milk if it is too thick/powdery. I always end up doing one or the other, it's totally fine :)

When the cake comes out the oven, leave it to cool a little before turning it out of the cake tins, so that it keeps its shape. Then, once cooled completely, add the butter cream to the top/bottom of one of the cakes, and add the other on top! 

Yum!
