Recipe - Chocolate and lemon cupcakes

Today I got my bake on!

I am obsessed with all things lemon-y and of course who doesn't like chocolate, so I put the two together and BAM. Chocolate cupcakes with lemon butter cream!

This is such an easy recipe and doesn't require anything too fancy.

Ingredients;


  • 200g self raisnig flour
  • 200g caster sugar
  • 200g butter
  • 3 eggs
  • 2 bars of plain chocolate (I like to use non-branded or cooking chocolate, using something like Dairy Milk gives a less chocolate-y flavour).
For the butter cream;


  • 150g butter
  • 75g icing sugar
  • 1 tblspn milk
  • The juice of 2 lemons

To make the basic cupcakes is easy. Start by creaming together the butter and sugar. Beat the eggs in a separate bowl, then add them little-by-little along with the flour to the creamy butter-sugar mixture, and mix them all up until it's thick and still creamy! To make them chocolate-y, instead of using cocoa powder, I melt the two bars of chocolate and mix them into the cake mix. Separate the mix into cake cases and bake at 180 degrees for 15-20 minutes.

Whilst they're baking, make the butter cream. Put the butter, icing sugar and milk into a bowl and mix mix mix until you get a cream-y mixture, it will happen quickly! Then add the lemon juice. Add a bit more icing sugar if the mixture is a bit too liquid-y.

Once the cakes are out the oven, leave them to cool completely before topping with your butter cream. Then eat them!
